Beyond Nutrients: Reflections on Food Classification, Health, and Sustainability at UNIBA, Bari — Italy

On May 20, 2026, I gave a lecture in the Scienze e Tecnologie Agrarie program at the University of Bari (UNIBA), Italy, titled “Oltre i nutrienti: ripensare la classificazione degli alimenti per la salute e la sostenibilità attraverso la NOVA”. During the class, I discussed the limitations of nutrient-based approaches to food classification and explored how the NOVA classification system contributes to a broader understanding of food processing, health, and sustainability. It was a valuable opportunity to exchange perspectives with students and reflect on the challenges of building healthier and more sustainable food systems through interdisciplinary dialogue.
